Ancient Syrah and black Grenache vines, facing the sun, and sheltered from the wind of the Mistral, are grown on long established soil. And then, when the optimum maturity is reached, harvested most carefully by hand.
A wine that evokes the grand vintages. It undergoes almost two years of ageing in huge oak barrels. Firmly woody, L’ Absolu is all about intensity and aromatic richness with touches of dark berries, liquorice, spices and damp soil.
L’ Absolu is best suited to festive meals with rich dishes cooked in sauce, spiced red meat, and strong aged cheeses.
This is a wine that requires preparation – if you just pop and drink you’ll completely miss the point. Open hours early and let it breathe, warm it a degree or two above room temperature (not too much), maybe even decant and then it will give you its best…
